Wedding Cake as Sweet as the First Time

When I got married, I never realized that there was so much involved. I was amazed at all the details required for the wedding cake alone! Find the right baker, the flavor, the icing. Round cake, square cake, tiered cake. Colors, flowers, decoration, set-up, storage, delivery and transport. Wait a minute…storage? I thought everyone was going to eat the thing!? Why do we need to store the wedding cake, too?

I quickly learned that over time it has become tradition for the newlywed couple to save the top tier of their wedding cake for their first anniversary. That’s great, but what is a cake going to taste like after being stored for a year!? Fortunately, the baker had some great tips to help preserve our cake.

1. Start by removing any decorations from the top tier of your wedding cake.

2. Wedding cakes are often placed on a sheet of cardboard or plastic. Make sure that the cardboard is covered in foil. If not, move the cake onto a piece of cardboard covered in foil so that your cake doesn’t end up smelling or tasting like cardboard. You can use the original piece of cardboard as a template if needed.

3. Put the cake in the freezer for an hour. The icing will become hard as you freeze it. This is important because you don’t want the icing to be sticky when you wrap it.

4. After freezing your wedding cake for an hour, wrap it in plastic wrap. Make sure that the cake is completely covered. The wrapping on your cake should NOT allow any air to get in.

5. Next, wrap it TWICE in aluminum foil. Wrapping it this way will eliminate the chance of freezer burn from destroying your cake.

6. Put the wrapped cake into a container (a baker’s box is fine) and store it in the freezer for a year.

7. Don’t forget to include plans to thaw the cake on your anniversary. Think up something special to do with your sweetheart while you’re waiting for your wedding cake to thaw.

If all goes well, your wedding cake will be as fresh and tasty as the day it was baked. Our one-year anniversary is coming up and I can’t wait!

I’m getting married May 30th 2009. I know that you should send out the invitations 6-8 weeks before the wedding. We already have the invitation picked out, the pictures done, reception place booked…would now be a good time to order them? Or should I wait until about February like some other people have told me?

Our wedding is in 3 months. ( 93 days to be exact, whooo hoo ) Im just going to make simple favors of M&m’s wrapped in tulle. I have plastic wine cups and swans, and even “glass slippers” ( not sure which im using yet though.
When is a good time i can do them to get them done and out of the way? Is it still too early. Will the chocolate go stale? How would i store them?
How soon before the wedding, if you used candy like that did you make your favors?
